Instructions
Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and roast them for 40 minutes, or until tender.
Let the beets cool, then peel and slice them into thin rounds or wedges.
In a large bowl, toss the mixed greens with olive oil, balsamic vinegar, salt, and pepper.
Arrange the roasted beets on top of the greens and sprinkle with crumbled feta cheese.
Serve immediately or chill in the refrigerator for a more refreshing flavor.
Notes
For an extra crunch, add chopped walnuts or sunflower seeds. You can also swap the feta with goat cheese or blue cheese for a different flavor.
