Ingredients
  

  • 4 medium-sized Beets
  • 2 cups Mixed greens
  • 1/4 cup crumbled Feta cheese
  • 2 tablespoons Olive oil
  • 1 tablespoon Balsamic vinegar
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Instructions
 

  • Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and roast them for 40 minutes, or until tender.
  • Let the beets cool, then peel and slice them into thin rounds or wedges.
  • In a large bowl, toss the mixed greens with olive oil, balsamic vinegar, salt, and pepper.
  • Arrange the roasted beets on top of the greens and sprinkle with crumbled feta cheese.
  • Serve immediately or chill in the refrigerator for a more refreshing flavor.

Notes

For an extra crunch, add chopped walnuts or sunflower seeds. You can also swap the feta with goat cheese or blue cheese for a different flavor.
