Ingredients
  

Soup Base

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp ground turmeric
  • 1/2 tsp ground cumin
  • 4 cups vegetable broth
  • 1 cup coconut milk unsweetened
  • 1 tsp salt or to taste
  • 1/4 tsp black pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Sauté onion until soft and translucent.
  • Add garlic, ginger, turmeric, and cumin; cook until fragrant.
  • Pour in vegetable broth and bring to a simmer.
  • Stir in coconut milk and simmer gently for 20 minutes.
  • Blend until smooth, season, and serve warm.

Notes

Black pepper helps activate turmeric’s benefits. Adjust thickness with extra broth if needed.
