Ingredients
  

Salad Base

  • 2 apples thinly sliced
  • 4 cups mixed greens washed and dried
  • 1/3 cup pecans toasted
  • 1/4 cup feta cheese crumbled

Dressing

  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey
  • 1/2 tsp Dijon mustard
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper

Instructions
 

  • Wash and slice the apples thinly. Place them in a mixing bowl with the greens.
  • Add toasted pecans and crumbled feta cheese to the bowl.
  • In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Serve immediately and garnish with extra nuts or cheese if desired.

Notes

Try adding dried cranberries or sunflower seeds for extra flavor and texture.
