Ingredients
  

Salad Base

  • 4 cups Arugula washed and dried
  • 1/2 cup Cherry Tomatoes halved
  • 1/4 cup Red Onion thinly sliced
  • 1/2 cup Feta Cheese crumbled
  • 1/4 cup Walnuts chopped

Dressing

  • 3 tbsp Olive Oil
  • 1 tbsp Balsamic Vinegar
  • 1 tsp Honey
  • Salt to taste
  • Pepper to taste

Instructions
 

  • In a large mixing bowl, combine the arugula, cherry tomatoes, red onion, feta cheese, and walnuts.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper to make the dressing.
  • Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  • Serve immediately, or let the salad rest in the fridge for a few minutes for the flavors to meld together.

Notes
