Ingredients
  

Salad Base

  • 1 cup cucumber sliced
  • 1 cup carrots julienned
  • 1 cup bean sprouts
  • 1/2 cup bell peppers sliced, red or green
  • 2 tbsp green onions chopped

Dressing

  • 3 tbsp soy sauce low sodium preferred
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil toasted
  • 1 tsp honey or maple syrup
  • 1 clove garlic minced
  • 1 tsp ginger grated fresh
  • 1 tbsp sesame seeds toasted

Instructions
 

  • In a large bowl, combine cucumber, carrots, bean sprouts, bell peppers, and green onions.
  • In a separate bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger.
  • Pour the dressing over the vegetables and toss until evenly coated.
  • Sprinkle toasted sesame seeds on top before serving.

Notes

Chill for 10 minutes before serving for extra crunch and flavor.
