Ingredients
  

  • 4 eggs scrambled
  • 4 slices whole-grain toast
  • 1 avocado sliced
  • 1 cup mixed berries strawberries, blueberries, blackberries
  • 1 cup sliced cucumber
  • 1 orange sliced into wedges
  • 1/4 cup smoked salmon optional

Instructions
 

  • Crack the eggs into a bowl, whisk, and season with salt and pepper.
  • Heat a non-stick skillet over medium heat and scramble the eggs until fluffy.
  • Toast the whole-grain bread slices until golden brown.
  • Arrange toast, scrambled eggs, sliced avocado, cucumber, orange wedges, and berries on a large plate.
  • Add smoked salmon if desired and garnish with fresh herbs.
  • Serve immediately and enjoy a fresh, balanced breakfast.

Notes

You can replace the salmon with grilled chicken or keep it vegetarian by adding more veggies.
