Ingredients
  

Salad Base

  • 4 medium beets roasted and sliced
  • 4 cups mixed greens spinach, arugula, or spring mix
  • 1/2 cup feta cheese crumbled
  • 1/3 cup walnuts toasted

Dressing

  • 3 tbsp olive oil extra virgin
  • 2 tbsp balsamic vinegar
  • 1 tsp honey
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper freshly ground

Instructions
 

  • Preheat oven to 400°F (200°C). Wrap beets in foil and roast for 35 minutes until tender.
  • Allow beets to cool, then peel and slice them.
  • Arrange mixed greens in a large salad bowl. Top with roasted beets, feta, and walnuts.
  • In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  • Drizzle dressing over the salad and toss gently before serving.

Notes

For extra flavor, add orange segments or fresh herbs like parsley.
