Ingredients
  

Soup Base

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 cups mixed vegetables carrots, potatoes, green beans
  • 4 cups vegetable broth
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper

Instructions
 

  • Turn the Instant Pot to sauté mode and heat the olive oil.
  • Add chopped onion and garlic. Sauté for 2–3 minutes until fragrant.
  • Add mixed vegetables, broth, salt, and pepper. Stir well.
  • Close the lid, set the valve to sealing, and cook on high pressure for 10 minutes.
  • Allow a natural pressure release for 5 minutes, then carefully release remaining pressure.
  • Open the lid, stir, taste, and adjust seasoning before serving.

Notes

You can add cooked beans, pasta, or shredded chicken to customize this soup as you gain confidence.
