Ingredients
  

Salad

  • 4 cups fresh broccoli florets chopped small
  • 1/2 cup cooked bacon crumbled
  • 1/2 cup dried cranberries
  • 1/3 cup red onion finely chopped
  • 1/3 cup sunflower seeds shelled
  • 1/2 cup shredded cheddar cheese optional

Dressing

  • 3/4 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 2 tbsp sugar
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper to taste

Instructions
 

  • In a small bowl, whisk together mayonnaise, vinegar, sugar, salt, and pepper until smooth.
  • In a large bowl, combine broccoli, bacon, cranberries, onion, sunflower seeds, and cheddar cheese.
  • Pour dressing over salad and toss until evenly coated.
  • Chill for 10 minutes before serving to let flavors meld.

Notes

For a lighter version, substitute half the mayonnaise with Greek yogurt. Add apples for sweetness or swap bacon for roasted chickpeas for a vegetarian twist.
