Instructions
Heat olive oil in a wok or large skillet over medium-high heat.
While the oil is heating, slice the chicken breasts (or tofu) into thin strips. Add to the wok and cook for 5-7 minutes until golden and cooked through.
Add the sliced bell pepper, carrot, and broccoli to the wok and stir-fry for another 5-6 minutes until the vegetables are tender but still crisp.
