Ingredients
  

  • 2 chicken breasts boneless and skinless or use tofu for a vegetarian version
  • 1 cup broccoli florets
  • 2 tbsp soy sauce
  • 1 tbsp olive oil for stir-frying

Instructions
 

  • Heat olive oil in a wok or large skillet over medium-high heat.
  • While the oil is heating, slice the chicken breasts (or tofu) into thin strips. Add to the wok and cook for 5-7 minutes until golden and cooked through.
  • Add the sliced bell pepper, carrot, and broccoli to the wok and stir-fry for another 5-6 minutes until the vegetables are tender but still crisp.
  • Pour in the soy sauce and stir to coat the chicken and vegetables evenly. Cook for another 2-3 minutes until everything is well coated.
  • Serve immediately with brown rice or quinoa for a wholesome, budget-friendly meal.

Notes

This stir-fry is highly customizable. Feel free to add or substitute any vegetables you have on hand, and for added crunch, you can sprinkle some sesame seeds on top.
