Instructions
Heat a large pot over medium heat and add a splash of oil. Add diced carrots and potatoes and sauté for 3–4 minutes.
Pour in the vegetable broth and canned diced tomatoes. Bring to a gentle boil.
Add zucchini, garlic powder, salt, and pepper. Stir well to combine.
Reduce heat and simmer for 20–25 minutes until vegetables are tender.
Notes
