Ingredients
  

Vegetables

  • 1 cup carrots diced
  • 1 cup potatoes cubed
  • 1 cup zucchini diced

Broth & Seasoning

  • 4 cups vegetable broth low-sodium
  • 1 can diced tomatoes
  • 1 tsp garlic powder
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper

Instructions
 

  • Heat a large pot over medium heat and add a splash of oil. Add diced carrots and potatoes and sauté for 3–4 minutes.
  • Pour in the vegetable broth and canned diced tomatoes. Bring to a gentle boil.
  • Add zucchini, garlic powder, salt, and pepper. Stir well to combine.
  • Reduce heat and simmer for 20–25 minutes until vegetables are tender.
