Ingredients
  

  • 4 medium Potatoes peeled and cubed
  • 1 small Onion diced
  • 1 medium Carrot peeled and diced
  • 2 stalks Celery chopped
  • 2 cloves Garlic minced
  • 4 cups Chicken or Vegetable Broth or water
  • 1 cup Milk optional for creaminess
  • 1 tsp Salt to taste
  • 1/2 tsp Black Pepper freshly ground

Instructions
 

  • In a large soup pot, heat some oil over medium heat. Add the diced onion, garlic, carrot, and celery. Cook for about 5 minutes, stirring occasionally until the vegetables soften.
  • Add the cubed potatoes to the pot and pour in the chicken or vegetable broth. Bring the mixture to a boil and then reduce the heat to low. Let it simmer for 20-25 minutes, or until the potatoes are tender.
  • Once the potatoes are cooked, use a potato masher to mash some of the potatoes in the pot to thicken the soup. If you prefer a creamier soup, add the milk at this stage and stir well.
  • Season with salt and pepper to taste. Simmer for an additional 5 minutes to allow the flavors to meld together.
  • Serve hot, garnished with fresh herbs or croutons if desired. Enjoy!
