Instructions
In a large mixing bowl, combine the thinly sliced celery, diced apple, and thinly sliced red onion.
In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper until smooth.
Pour the dressing over the celery mixture and toss well to combine.
Top with chopped walnuts and fresh parsley for garnish.
Serve immediately or refrigerate for 10-15 minutes to allow the flavors to meld.
Notes
This salad is best served fresh but can be stored in the refrigerator for a few hours before serving.
