Ingredients
  

  • 4 stalks Celery thinly sliced
  • 1 medium Apple diced
  • 1/4 small Red Onion thinly sliced
  • 1/4 cup Walnuts chopped
  • 2 tbsp Olive Oil
  • 2 tbsp Lemon Juice
  • 1 tsp Honey
  • 1/2 tsp Dijon Mustard
  • to taste Salt
  • to taste Black Pepper
  • 2 tbsp Fresh Parsley chopped, for garnish

Instructions
 

  • In a large mixing bowl, combine the thinly sliced celery, diced apple, and thinly sliced red onion.
  • In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper until smooth.
  • Pour the dressing over the celery mixture and toss well to combine.
  • Top with chopped walnuts and fresh parsley for garnish.
  • Serve immediately or refrigerate for 10-15 minutes to allow the flavors to meld.

Notes

This salad is best served fresh but can be stored in the refrigerator for a few hours before serving.
