Instructions
Melt butter in a large pot over medium heat and sauté onion until soft.
Add garlic and cook until fragrant, about 30 seconds.
Whisk in flour and cook for 1 minute to form a roux.
Slowly whisk in broth and milk until smooth.
Add broccoli and simmer until tender, about 10 minutes.
Reduce heat and stir in cheddar cheese until melted. Season and serve.
Notes
For extra creaminess, blend part of the soup before adding cheese.
