Ingredients
  

Soup Base

  • 2 tbsp butter
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk whole milk preferred
  • 2 cups broccoli florets chopped
  • 2 cups sharp cheddar cheese shredded
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper

Instructions
 

  • Melt butter in a large pot over medium heat and sauté onion until soft.
  • Add garlic and cook until fragrant, about 30 seconds.
  • Whisk in flour and cook for 1 minute to form a roux.
  • Slowly whisk in broth and milk until smooth.
  • Add broccoli and simmer until tender, about 10 minutes.
  • Reduce heat and stir in cheddar cheese until melted. Season and serve.

Notes

For extra creaminess, blend part of the soup before adding cheese.
