Cheddar Garlic Herb Potato Soup

Ingredients
  

  • 4 medium potatoes peeled and diced
  • 1 tbsp olive oil for sautéing
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 4 cups chicken or vegetable broth
  • 1 cup cheddar cheese shredded
  • 1/2 cup milk or cream for a richer texture
  • 1 tbsp fresh parsley chopped, for garnish
  • 1/2 tsp dried thyme
  • 1/2 tsp salt to taste
  • 1/4 tsp pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add diced onion and garlic, sautéing for 3-5 minutes until softened and fragrant.
  • Add the diced potatoes and vegetable or chicken broth to the pot. Bring to a boil, then reduce heat and let simmer for 15-20 minutes until the potatoes are tender.
  • Once the potatoes are tender, use a potato masher to slightly mash some of the potatoes to create a thicker texture for the soup. Add the milk (or cream) and stir well.
  • Stir in the shredded cheddar cheese until melted and smooth. Season with dried thyme, salt, and pepper to taste.
  • Serve hot, garnished with fresh parsley and extra shredded cheddar cheese if desired.

Notes

This soup is perfect for any occasion. Feel free to make it even richer by using cream instead of milk, and add a dash of hot sauce if you like a little heat!
