Instructions
Preheat oven to 400°F (200°C).
Toss the quartered potatoes with olive oil and ranch seasoning until evenly coated.
Spread potatoes on a baking sheet and roast for 20 minutes, flipping halfway through.
Meanwhile, sauté smoked sausage slices in a skillet until browned on both sides.
Combine roasted potatoes and sausage in a baking dish, sprinkle with cheese, and bake for another 10 minutes until cheese melts.
Garnish with parsley and serve hot.
Notes
Try swapping cheddar with pepper jack cheese for a spicy twist!
