Ingredients
  

CRUST:

  • 3 cups UNBLEACHED all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/4 tsp. sea salt
  • 3 sticks unsalted butter chilled (1 1/2 cups)

CHERRY PIE FILLING:

  • 3 cups cherries pitted and halved
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 cup sour cream
  • 1 dash sea salt
  • 1 tsp. almond extract
  • 3/4 cup UNBLEACHED all-purpose flour

Instructions
 

  • Stir sugar, salt, and flour in a large bowl.
  • Cut in butter with a pastry blender until crumbly.
  • Set aside 1½ cups of the mixture for topping.
  • Press the rest into a greased 9x13” glass baking dish.
  • Bake at 350°F for 12–15 minutes until lightly browned.
  • Whisk eggs in a clean bowl.
  • Add sugar, sour cream, salt, almond extract, and flour. Whisk until smooth.
  • Gently fold in cherries.
  • Pour filling over hot crust.
  • Top with reserved crumb mixture.
  • Bake 55–65 minutes until set.
  • Cool at least 1 hour before slicing.

Notes

Pat cherries dry after halving to prevent watery filling.
Stir cherries gently into the filling to avoid discoloration.
