CRUST:
- 3 cups UNBLEACHED all-purpose flour
- 1 1/2 cups granulated sugar
- 1/4 tsp. sea salt
- 3 sticks unsalted butter chilled (1 1/2 cups)
CHERRY PIE FILLING:
- 3 cups cherries pitted and halved
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 cup sour cream
- 1 dash sea salt
- 1 tsp. almond extract
- 3/4 cup UNBLEACHED all-purpose flour
Stir sugar, salt, and flour in a large bowl.
Cut in butter with a pastry blender until crumbly.
Set aside 1½ cups of the mixture for topping.
Press the rest into a greased 9x13” glass baking dish.
Bake at 350°F for 12–15 minutes until lightly browned.
Whisk eggs in a clean bowl.
Add sugar, sour cream, salt, almond extract, and flour. Whisk until smooth.
Gently fold in cherries.
Pour filling over hot crust.
Top with reserved crumb mixture.
Bake 55–65 minutes until set.
Cool at least 1 hour before slicing.
Pat cherries dry after halving to prevent watery filling.
Stir cherries gently into the filling to avoid discoloration.
