Ingredients
  

  • 2 tbsp butter
  • 1 onion finely diced
  • 2 celery stalks chopped
  • 2 carrots shredded
  • 3 cloves garlic minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked chicken shredded or diced
  • 1 cup potato gnocchi
  • 1 cup fresh spinach chopped
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper

Instructions
 

  • Melt butter in a large pot over medium heat and sauté onion, celery, and carrots until softened.
  • Add garlic and cook briefly until fragrant.
  • Pour in chicken broth and bring to a gentle simmer.
  • Add chicken and gnocchi, cooking until gnocchi are tender.
  • Stir in cream and spinach, season, and serve warm.

Notes

Do not boil after adding cream to keep the soup smooth and creamy.
