- 1 cup jasmine rice rinsed
- 1.25 cups low-sodium chicken broth
- 2 boneless skinless chicken thighs
- 1/2 onion finely chopped
- 2 garlic cloves minced
- 1/3 cup frozen peas
- 1 tsp soy sauce
- 1/2 tsp ground turmeric
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Add rinsed rice and chicken broth into the rice cooker bowl.
Place chicken thighs on top of the rice. Season with salt, pepper, turmeric, and smoked paprika.
Add chopped onion, garlic, and peas over the chicken.
Drizzle soy sauce over the mixture.
Close the rice cooker lid and set it to the standard cook mode.
Let the cooker run until it finishes its cycle (about 30 minutes).
Once cooked, check that chicken has reached 165°F internal temperature.
Let rest for 5 minutes, then gently fluff and mix everything together.
Serve warm, garnished with chopped parsley.
Use chicken breasts sliced thin for faster cooking, or substitute with bone-in thighs if preferred.
Add a splash of lemon juice after cooking for brightness.
Leftovers store well in the fridge for up to 3 days and reheat beautifully.
