Ingredients
  

  • 1 cup jasmine rice rinsed
  • 1.25 cups low-sodium chicken broth
  • 2 boneless skinless chicken thighs
  • 1/2 onion finely chopped
  • 2 garlic cloves minced
  • 1/3 cup frozen peas
  • 1 tsp soy sauce
  • 1/2 tsp ground turmeric
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Add rinsed rice and chicken broth into the rice cooker bowl.
  • Place chicken thighs on top of the rice. Season with salt, pepper, turmeric, and smoked paprika.
  • Add chopped onion, garlic, and peas over the chicken.
  • Drizzle soy sauce over the mixture.
  • Close the rice cooker lid and set it to the standard cook mode.
  • Let the cooker run until it finishes its cycle (about 30 minutes).
  • Once cooked, check that chicken has reached 165°F internal temperature.
  • Let rest for 5 minutes, then gently fluff and mix everything together.
  • Serve warm, garnished with chopped parsley.

Notes

Use chicken breasts sliced thin for faster cooking, or substitute with bone-in thighs if preferred.
Add a splash of lemon juice after cooking for brightness.
Leftovers store well in the fridge for up to 3 days and reheat beautifully.
