Ingredients
  

  • 2 cups cooked chicken breast shredded
  • 1 cup celery chopped
  • 1 cup grape tomatoes halved
  • 1/2 cup red onion diced
  • 1/4 cup mayonnaise or Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper freshly ground

Instructions
 

  • In a large mixing bowl, combine the shredded chicken, chopped celery, halved grape tomatoes, and diced red onion.
  • In a separate bowl, whisk together the mayonnaise (or Greek yogurt), Dijon mustard, lemon juice, salt, and black pepper until smooth.
  • Pour the dressing over the chicken mixture and toss gently to combine until everything is well coated.
  • Cover the salad and refrigerate for at least 30 minutes to allow the flavors to marinate.
  • Before serving, give the salad a quick toss and enjoy!

Notes

This chicken salad can be served as a sandwich filling, on top of greens, or as a stand-alone dish. Add nuts or dried cranberries for extra flavor!
