Ingredients
  

Chicken Salad

  • 2 cups cooked chicken breast shredded or diced
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice fresh
  • 1/2 cup celery finely diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup red grapes halved, optional
  • 2 tbsp fresh parsley chopped
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste

Instructions
 

  • In a large bowl, mix mayonnaise, Dijon mustard, and lemon juice until smooth.
  • Add chicken, celery, onion, grapes, and parsley to the bowl.
  • Season with salt and black pepper, then fold gently until all ingredients are evenly coated.
  • Chill for at least 10 minutes to let the flavors meld before serving.
  • Serve in sandwiches, wraps, lettuce cups, or over mixed greens.

Notes

For crunch, add toasted almonds or walnuts. Substitute Greek yogurt for mayonnaise for a lighter version. Store covered in the refrigerator for up to 3 days.
