  • 1 cup Cucumber diced
  • 1/2 cup Cherry Tomatoes halved
  • 1/4 cup Red Onion thinly sliced
  • 1/4 cup Fresh Parsley chopped
  • 2 tbsp Olive Oil
  • 1 tbsp Lemon Juice freshly squeezed
  • 1/2 tsp Cumin optional
  • to taste Salt

Instructions
 

  • In a large mixing bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, and parsley.
  • In a small bowl, whisk together olive oil, lemon juice, cumin, salt, and black pepper.
  • Pour the dressing over the salad and toss to combine, ensuring all ingredients are well coated.
