Instructions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream the softened butter and sweetener together until light and fluffy.
Add the egg and vanilla extract, mixing until fully combined.
In a separate bowl, whisk together flour, baking soda, and salt.
Gradually mix the dry ingredients into the wet mixture, then fold in the chocolate chips.
Scoop dough onto the baking sheet and bake for 10–12 minutes, until edges are lightly golden.
Notes
Let cookies cool on the tray for a few minutes before transferring to a rack. They firm up as they cool.
