Ingredients
  

  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sweetener erythritol or monk fruit blend
  • 1 egg room temperature
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup sugar-free chocolate chips

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream the softened butter and sweetener together until light and fluffy.
  • Add the egg and vanilla extract, mixing until fully combined.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet mixture, then fold in the chocolate chips.
  • Scoop dough onto the baking sheet and bake for 10–12 minutes, until edges are lightly golden.

Notes

Let cookies cool on the tray for a few minutes before transferring to a rack. They firm up as they cool.
