Instructions
Heat olive oil in a large pot over medium heat.
Add onion and carrots, and sauté until softened.
Stir in garlic and cook for 30 seconds.
Pour in chicken broth and bring to a gentle boil.
Add rice and simmer until tender.
Add shredded chicken, season, and simmer for 10 minutes.
Notes
This soup thickens as it sits. Add extra broth when reheating if needed.
