egg noodles
Instructions
In a large soup pot, add the chicken broth, chicken breasts, carrots, celery, onion, garlic, thyme, and bay leaf. Bring to a boil.
Once boiling, reduce the heat and simmer for 20 minutes, or until the chicken is cooked through.
Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the soup.
Add the egg noodles to the pot and simmer for another 8-10 minutes, or until the noodles are tender.
Season the soup with salt and pepper to taste. Serve hot and enjoy!
Notes
This soup can be made ahead of time and stored in the refrigerator for up to 3 days. It also freezes well for up to 3 months!
