Ingredients
  

  • 1 lb boneless skinless chicken breast
  • 8 cups chicken broth
  • 2 carrots peeled and sliced
  • 2 celery stalks sliced
  • 1 small yellow onion diced
  • 3 cloves garlic minced
  • 1 tsp dried thyme
  • 2 cups egg noodles

Instructions
 

  • In a large soup pot, add the chicken broth, chicken breasts, carrots, celery, onion, garlic, thyme, and bay leaf. Bring to a boil.
  • Once boiling, reduce the heat and simmer for 20 minutes, or until the chicken is cooked through.
  • Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the soup.
  • Add the egg noodles to the pot and simmer for another 8-10 minutes, or until the noodles are tender.
  • Season the soup with salt and pepper to taste. Serve hot and enjoy!

Notes

This soup can be made ahead of time and stored in the refrigerator for up to 3 days. It also freezes well for up to 3 months!
