Ingredients
  

Chicken Salad

  • 2 cups cooked chicken breast shredded or diced
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice freshly squeezed
  • 1/2 cup celery finely diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup red grapes halved, optional
  • 2 tbsp fresh parsley chopped
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste

Instructions
 

  • In a large bowl, combine mayonnaise, Dijon mustard, and lemon juice. Whisk until smooth.
  • Add shredded chicken, celery, onion, grapes, and parsley.
  • Season with salt and pepper. Stir until all ingredients are evenly coated.
  • Chill for at least 10 minutes before serving to let flavors meld.
  • Serve in sandwiches, wraps, or lettuce cups for a lighter option.

Notes

Use leftover rotisserie chicken for convenience. Add nuts like almonds or walnuts for crunch. Store covered in the fridge for up to 3 days.
