Ingredients
  

Salad Base

  • 2 cups cooked chicken breast shredded or diced
  • 1 cup romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber sliced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup toasted nuts or seeds optional for crunch

Dressing

  • 1/3 cup Greek yogurt or mayonnaise
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp Dijon mustard
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper freshly ground

Instructions
 

  • In a large bowl, combine cooked chicken, lettuce, tomatoes, cucumber, red onion, and nuts or seeds if using.
  • In a small bowl, whisk together Greek yogurt (or mayonnaise), lemon juice, Dijon mustard, salt, and pepper until smooth.
  • Pour the dressing over the salad ingredients and toss gently to combine.
  • Refrigerate for 10 minutes to let the flavors meld. Serve chilled or at room temperature.

Notes

For added flavor, mix in diced avocado, apple, or celery. Great served in lettuce wraps, sandwiches, or on its own.
