Ingredients
  

Salad Base

  • 2 cups grilled chicken breast sliced
  • 4 cups romaine or mixed greens washed and chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1/2 cup croutons optional for crunch
  • 1/4 cup shredded Parmesan cheese

Dressing

  • 1/3 cup Greek yogurt or mayonnaise
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp Dijon mustard
  • 1 tsp honey optional for sweetness
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper freshly ground

Instructions
 

  • Grill or pan-sear chicken breasts until cooked through, about 6–7 minutes per side. Let rest, then slice thinly.
  • In a large bowl, combine the greens, cherry tomatoes, cucumber, Parmesan, and croutons.
  • In a small bowl, whisk together Greek yogurt (or mayonnaise), lemon juice, Dijon mustard, honey, salt, and pepper until smooth.
  • Drizzle the dressing over the salad and toss gently to coat evenly.
  • Top with the sliced grilled chicken and serve immediately.

Notes

Customize your salad with avocado slices, boiled eggs, or roasted chickpeas for extra protein and texture.
