Instructions
Slice the cucumbers into thin rounds and place them in a large mixing bowl.
Thinly slice the red onion and add it to the cucumbers.
In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, pepper, and dill to create the dressing.
Pour the dressing over the cucumbers and onions. Toss gently to coat everything evenly.
Refrigerate for 30 minutes to allow the flavors to meld, then serve chilled.
Notes
For extra crunch, you can add a handful of toasted sunflower seeds or chopped walnuts to the salad.
