Ingredients
  

  • 2 medium Cucumbers
  • 1/2 small Red onion
  • 1 tbsp Dill
  • 2 tbsp Olive oil
  • 2 tbsp Apple cider vinegar
  • 1 tsp Honey
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper

Instructions
 

  • Slice the cucumbers into thin rounds and place them in a large mixing bowl.
  • Thinly slice the red onion and add it to the cucumbers.
  • In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, pepper, and dill to create the dressing.
  • Pour the dressing over the cucumbers and onions. Toss gently to coat everything evenly.
  • Refrigerate for 30 minutes to allow the flavors to meld, then serve chilled.

Notes

For extra crunch, you can add a handful of toasted sunflower seeds or chopped walnuts to the salad.
