Ingredients
  

Pasta Base

  • 8 oz spaghetti or short pasta cooked & cooled
  • 1 cup cherry tomatoes halved
  • 1/2 cup mixed olives pitted
  • 1 cup fresh basil leaves
  • 1/4 cup parmesan cheese grated or shaved

Dressing

  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Cook pasta according to package directions. Drain and let cool.
  • Place cooled pasta in a bowl and add tomatoes, olives, basil, and parmesan.
  • Whisk dressing ingredients together in a small bowl.
  • Pour dressing over pasta salad and toss gently until coated.
  • Chill for 15 minutes before serving to enhance flavors.

Notes

Add mozzarella, salami, arugula, or roasted peppers for variations. Best served slightly chilled.
