Ingredients
  

Salad Base

  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1/2 red onion thinly sliced
  • 1/2 cup black olives pitted

Dressing

  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper freshly ground

Instructions
 

  • Wash and chop all vegetables as directed.
  • Add lettuce, tomatoes, cucumber, red onion, and olives to a large mixing bowl.
  • In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  • Pour the dressing over the salad and toss until evenly coated.
  • Serve immediately as a side or light main dish.

Notes

For extra flavor, sprinkle grated Parmesan or add fresh basil leaves.
