Instructions
Wash and chop all vegetables as directed.
Add lettuce, tomatoes, cucumber, red onion, and olives to a large mixing bowl.
In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
Pour the dressing over the salad and toss until evenly coated.
Serve immediately as a side or light main dish.
Notes
For extra flavor, sprinkle grated Parmesan or add fresh basil leaves.
