Ingredients
  

Pasta Salad Base

  • 3 cups rotini or fusilli pasta cooked and cooled
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup black olives sliced
  • 1/3 cup red onion thinly sliced
  • 1/2 cup bell pepper diced

Dressing

  • 1/3 cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Cook the pasta according to package instructions, drain, and let cool completely.
  • Chop and prepare all vegetables while the pasta cools.
  • Whisk together the dressing ingredients in a small bowl.
  • Add pasta, vegetables, and olives to a large mixing bowl.
  • Pour the dressing over the salad and toss until fully coated.
  • Refrigerate at least 30 minutes before serving.

Notes

Feel free to add feta, fresh basil, or grilled chicken for variations.
