Ingredients
  

  • 4 cups of chicken broth medium carrots slicedn2 stalks celery, choppedn1 onion, peeled and halvedn2 garlic cloves, smashedn2 sprigs fresh thymen2 bay leavesnSalt and pepper to taste

Instructions
 

  • In a large pot, combine chicken broth, carrots, celery, onion, garlic, thyme, and bay leaves.
    Bring the mixture to a boil, then reduce heat and let it simmer for about 30-40 minutes. Season the soup with salt and pepper to taste.
    Strain the broth to remove the vegetables and herbs.
    Serve the clear soup hot, garnished with fresh herbs or a squeeze of lemon, if desired.

Notes

You can substitute chicken broth with vegetable broth for a vegetarian version.nFor a richer flavor, you can add bone-in chicken to the broth while simmering and remove it before straining the soup.
