Ingredients
  

Pasta Salad Base

  • 2 cups Pasta cooked and drained
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Cucumber diced
  • 1/4 cup Red Onion finely chopped
  • 1/4 cup Bell Pepper chopped

Dressing

  • 3 tbsp Olive Oil
  • 1 tbsp Red Wine Vinegar
  • 1 tsp Dijon Mustard
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Cook the pasta according to package directions, then drain and set aside to cool.
  • In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, and bell pepper.
  • In a separate small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.
  • Pour the dressing over the pasta salad and toss to coat all the ingredients evenly.
  • Let the salad sit in the fridge for at least 15 minutes to allow the flavors to meld together before serving.

Notes

This cold pasta salad is perfect for picnics, barbecues, or as a side dish for any meal. You can also add grilled chicken or feta cheese for extra flavor!
