Ingredients
  

Salad Base

  • 4 cups mixed lettuce leaves washed and dried
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber thinly sliced
  • 1 cup shredded carrots
  • 1/2 cup bell pepper sliced thin

Dressing

  • 3 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp honey or maple syrup
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp dijon mustard optional

Instructions
 

  • Wash and prepare all vegetables. Pat dry or use a salad spinner to remove excess moisture.
  • In a large mixing bowl, combine lettuce, cherry tomatoes, cucumber, shredded carrots, and bell peppers.
  • In a small bowl, whisk together olive oil, lemon juice, honey, salt, pepper, and mustard until emulsified.
  • Pour the dressing over the vegetables and toss gently to coat evenly.
  • Serve immediately or refrigerate for up to 30 minutes before serving for a crisp, chilled salad.

Notes

Add your favorite toppings such as feta cheese, croutons, or seeds for extra flavor and texture.
