Ingredients
  

  • 2 medium Carrots peeled and sliced
  • 2 stalks Celery chopped
  • 3 medium Potatoes peeled and cubed
  • 1 small Onion diced
  • 2 cloves Garlic minced
  • 4 cups Chicken broth or vegetable broth
  • 1 cup Heavy cream
  • 1 tsp Salt to taste
  • 1/2 tsp Black pepper freshly ground

Instructions
 

  • In a large pot, heat some oil over medium heat and sauté the onion and garlic until softened, about 3 minutes.
  • Add the carrots, celery, and potatoes to the pot. Stir to combine and cook for another 5 minutes.
  • Pour in the chicken broth, season with salt and pepper, and bring to a boil. Once boiling, reduce the heat to low and let the soup simmer for 20 minutes, or until the vegetables are tender.
  • Once the vegetables are tender, add the heavy cream and stir well. Let the soup simmer for an additional 5 minutes to combine the flavors.
  • Serve hot, garnished with fresh herbs or croutons if desired. Enjoy!
