Ingredients
  

Soup Base

  • 2 tbsp olive oil
  • 1 onion diced
  • 3 carrots sliced
  • 2 celery stalks sliced
  • 4 garlic cloves minced
  • 1 large potato cubed
  • 6 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper

Toppings

  • chopped cilantro optional
  • tortilla strips optional
  • avocado slices optional

Instructions
 

  • Heat olive oil in a large pot and sauté onion, carrots, and celery until softened.
  • Add garlic and cook until fragrant.
  • Stir in potatoes, chicken broth, cooked chicken, and seasonings.
  • Simmer for 25–30 minutes until vegetables are tender and flavors combine.
  • Serve hot with cilantro, tortilla strips, and avocado.

Notes

This soup freezes beautifully and tastes even better the next day.
