Ingredients
  

  • 2 cups Fresh Corn Kernels cut from cob
  • 1/2 cup Red Bell Pepper diced
  • 1/4 cup Red Onion finely diced
  • 1/4 cup Cucumber diced
  • 1/4 cup Fresh Cilantro chopped
  • 1/4 cup Lime Juice freshly squeezed
  • 2 tbsp Olive Oil
  • 1 tbsp Honey
  • to taste Salt
  • to taste Black Pepper

Instructions
 

  • In a large mixing bowl, combine the fresh corn kernels, red bell pepper, red onion, cucumber, and cilantro.
  • In a separate small bowl, whisk together the lime juice, olive oil, honey, salt, and black pepper.
  • Pour the dressing over the salad and toss everything together to combine.
  • Serve immediately, or refrigerate for 15-30 minutes to allow the flavors to meld.
