Instructions
Cook the pasta according to package instructions, then drain and let cool slightly.
While the pasta is cooking, cook the bacon in a skillet until crispy. Remove the bacon from the pan, crumble it, and set it aside.
In a large bowl, combine the cooked pasta, crumbled bacon, halved cherry tomatoes, sweet corn, red onion, and shredded cheddar cheese.
In a small bowl, whisk together the mayonnaise, sour cream, ranch dressing, lime juice, salt, and pepper to create the dressing.
Pour the dressing over the pasta mixture and toss gently to combine.
Garnish with chopped cilantro and serve immediately. This salad can be stored in the fridge for a few hours before serving for better flavor.
Notes
For an extra kick, add jalapeños or a dash of hot sauce to the dressing. You can also substitute Greek yogurt for sour cream for a lighter version.
