Ingredients
  

  • 6 medium Potatoes peeled and diced
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 1 cup Cheddar cheese shredded
  • 4 slices Bacon cooked and crumbled
  • 1 tsp Salt
  • 1 tsp Black pepper freshly ground

Instructions
 

  • In a large pot, heat a little oil and sauté the onions and garlic for about 3 minutes until fragrant.
  • Add the diced potatoes, chicken broth, salt, and pepper. Stir to combine and bring to a boil.
  • Once the mixture is boiling, reduce the heat and let it simmer for 20 minutes, or until the potatoes are tender.
  • Use a potato masher or immersion blender to mash the soup to your desired consistency.
  • Stir in the heavy cream and shredded cheddar cheese. Let it cook for another 5 minutes until the cheese is melted.
  • Serve the soup topped with crumbled bacon and a sprinkle of extra cheddar cheese.
