Instructions
In a large pot, heat a little oil and sauté the onions and garlic for about 3 minutes until fragrant.
Add the diced potatoes, chicken broth, salt, and pepper. Stir to combine and bring to a boil.
Once the mixture is boiling, reduce the heat and let it simmer for 20 minutes, or until the potatoes are tender.
Use a potato masher or immersion blender to mash the soup to your desired consistency.
Stir in the heavy cream and shredded cheddar cheese. Let it cook for another 5 minutes until the cheese is melted.
Serve the soup topped with crumbled bacon and a sprinkle of extra cheddar cheese.
