- 8 oz pasta rotini or farfalle preferred
- 1 cup crab meat fresh or lump
- 1/2 cup celery finely chopped
- 1/2 cup red onion finely chopped
- 1/4 cup fresh parsley chopped
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- Salt and pepper to taste
- Optional: 1/2 cup sweet corn or peas
Cook the pasta according to the package instructions. Drain and rinse with cold water.
In a large mixing bowl, combine the cooled pasta, crab meat, chopped celery, red onion, and parsley. Toss gently to mix.
In a separate bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper to form the dressing.
Pour the dressing over the pasta mixture and toss until everything is well coated.
Chill the salad in the refrigerator for at least 30 minutes before serving.
This recipe can be adjusted with additional veggies like bell peppers or cucumber for extra crunch.
For a healthier version, replace mayonnaise with Greek yogurt.
