Ingredients
  

Jello Base

  • 6 oz cranberry gelatin mix
  • 2 cups boiling water
  • 1 cup cold water

Fruit & Nuts

  • 1 cup fresh cranberries chopped
  • 1 cup crushed pineapple drained
  • 1/2 cup walnuts chopped
  • 1/4 cup celery finely diced

Instructions
 

  • In a large bowl, dissolve the cranberry gelatin in boiling water.
  • Stir in cold water and let the mixture cool slightly.
  • Add chopped cranberries, crushed pineapple, walnuts, and celery to the gelatin.
  • Pour into a mold and refrigerate until firm, about 4 hours.
  • Unmold onto a serving plate and garnish with fresh mint or extra cranberries.

Notes

Can be made a day ahead—flavors develop beautifully overnight.
