Instructions
In a large bowl, dissolve the cranberry gelatin in boiling water.
Stir in cold water and let the mixture cool slightly.
Add chopped cranberries, crushed pineapple, walnuts, and celery to the gelatin.
Pour into a mold and refrigerate until firm, about 4 hours.
Unmold onto a serving plate and garnish with fresh mint or extra cranberries.
Notes
Can be made a day ahead—flavors develop beautifully overnight.
