Ingredients
  

Soup Base

  • 4 tbsp butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups vegetable or chicken broth
  • 2 cups half-and-half or whole milk
  • 3 cups broccoli florets, chopped
  • 2 cups shredded sharp cheddar cheese
  • salt & pepper to taste

Instructions
 

  • Melt butter in a large pot over medium heat. Add onions and sauté until soft, then stir in garlic.
  • Whisk in flour to form a roux and cook for 1 minute.
  • Slowly pour in broth and milk, whisking constantly until smooth.
  • Add chopped broccoli and simmer for 15 minutes until tender.
  • Stir in cheddar cheese until melted. Season with salt and pepper to taste.

Notes

For a smoother soup, blend half before adding cheese.
