Instructions
Melt butter in a large pot over medium heat. Add onions and sauté until soft, then stir in garlic.
Whisk in flour to form a roux and cook for 1 minute.
Slowly pour in broth and milk, whisking constantly until smooth.
Add chopped broccoli and simmer for 15 minutes until tender.
Stir in cheddar cheese until melted. Season with salt and pepper to taste.
Notes
For a smoother soup, blend half before adding cheese.
