Ingredients
  

Soup Ingredients

  • 2 chicken breasts boneless, skinless
  • 1 onion diced
  • 2 carrots chopped
  • 2 celery stalks sliced
  • 4 cups chicken broth
  • 1 cup milk
  • 3 tbsp flour for thickening
  • 1 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper

Optional

  • fresh parsley for garnish

Instructions
 

  • In a large pot, sauté onions, carrots, and celery in butter until softened.
  • Add chicken breasts and pour in chicken broth. Bring to a boil, then simmer for 20 minutes.
  • Remove chicken, shred it, and return it to the pot.
  • Whisk flour into milk until smooth, then pour into the soup to thicken.
  • Simmer for 10 more minutes, season with salt and pepper, and garnish with parsley.

Notes

Add cooked potatoes or dumplings for extra heartiness.
