Instructions
In a large pot, sauté onions, carrots, and celery in butter until softened.
Add chicken breasts and pour in chicken broth. Bring to a boil, then simmer for 20 minutes.
Remove chicken, shred it, and return it to the pot.
Whisk flour into milk until smooth, then pour into the soup to thicken.
Simmer for 10 more minutes, season with salt and pepper, and garnish with parsley.
Notes
Add cooked potatoes or dumplings for extra heartiness.
