Ingredients
  

Soup Base

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp red curry paste
  • 400 ml coconut milk full-fat
  • 3 cups vegetable broth
  • 1 cup mixed vegetables carrots, bell peppers, mushrooms
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot and sauté the onion until soft.
  • Add garlic, ginger, and curry paste. Cook until fragrant.
  • Stir in coconut milk and vegetable broth until smooth.
  • Add vegetables and simmer until tender.
  • Season to taste and serve hot.

Notes

Add chickpeas, tofu, or noodles to make the soup more filling.
