Instructions
Heat olive oil in a large soup pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
Add minced garlic and cook for another minute until fragrant.
Add the diced tomatoes, vegetable broth, and dried basil. Stir and bring to a simmer. Cook for 15-20 minutes to allow the flavors to meld.
Use an immersion blender or transfer the soup to a regular blender and blend until smooth.
Return the soup to the pot and stir in the heavy cream. Heat the soup for another 5 minutes until warmed through.
Serve hot with a garnish of fresh basil if desired.
Notes
This soup can be served with a side of crusty bread or a grilled cheese sandwich for a classic combination.
