Instructions
In a large pot, heat olive oil over medium heat. Add minced garlic and cook for 1 minute until fragrant.
Add canned tomatoes and vegetable broth to the pot. Bring to a boil, then reduce to a simmer for 10 minutes.
Stir in the heavy cream and chopped basil. Simmer for another 5 minutes, then blend the soup until smooth (optional).
Meanwhile, butter the bread slices and place cheese in between. Grill the sandwich on medium heat until golden brown and the cheese is melted.
Serve the creamy tomato basil soup with the grilled cheese sandwich for dipping. Garnish with additional basil if desired.
Notes
For a smoother soup, use an immersion blender or regular blender to blend the soup to your desired consistency.
