Creamy Tomato Basil Soup with Grilled Cheese

This creamy tomato basil soup is paired with a golden grilled cheese sandwich, making for the ultimate comfort meal.

Ingredients
  

  • 2 cups canned tomatoes crushed or whole
  • 1 cup vegetable broth low-sodium
  • 1/4 cup heavy cream
  • 1 tbsp olive oil
  • 1 tsp garlic minced
  • 1 cup fresh basil chopped
  • 4 slices bread for grilled cheese
  • 1 cup cheddar cheese sliced
  • 1 tbsp butter for grilling

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  • Add canned tomatoes and vegetable broth to the pot. Bring to a boil, then reduce to a simmer for 10 minutes.
  • Stir in the heavy cream and chopped basil. Simmer for another 5 minutes, then blend the soup until smooth (optional).
  • Meanwhile, butter the bread slices and place cheese in between. Grill the sandwich on medium heat until golden brown and the cheese is melted.
  • Serve the creamy tomato basil soup with the grilled cheese sandwich for dipping. Garnish with additional basil if desired.

Notes

For a smoother soup, use an immersion blender or regular blender to blend the soup to your desired consistency.
