Ingredients
  

  • 2 cups cooked rice preferably chilled or day-old rice
  • 1 cup cucumber diced
  • 1/2 cup carrot shredded
  • 1/4 cup red bell pepper diced
  • 1/4 cup green onions sliced
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1/2 tsp ginger grated
  • 1/4 tsp garlic minced
  • 1 tbsp sesame seeds for garnish

Instructions
 

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the cooked rice and fry until it becomes crispy, stirring occasionally for 5-7 minutes. Set aside to cool slightly.
  • In a large bowl, combine the crispy rice with the diced cucumber, shredded carrot, red bell pepper, and sliced green onions.
  • In a small bowl, whisk together the remaining olive oil, soy sauce, sesame oil, grated ginger, and minced garlic to create the dressing.
  • Drizzle the dressing over the salad and toss gently to combine all the ingredients.
  • Garnish with sesame seeds and serve immediately for a crunchy, flavorful salad!

Notes

This crispy rice salad can be customized with additional vegetables like edamame or avocado. For extra crunch, you can add some roasted peanuts or cashews.
