Ingredients
  

  • 2 lbs russet potatoes2 tbsp olive oil1 tsp garlic powder1 tsp onion powderSalt and pepper to tasteFresh parsley for garnish

Instructions
 

  • Boil the russet potatoes until fork-tender, about 15-20 minutes.
  • Preheat the oven to 400°F (200°C).
  • Drain the potatoes and let them cool slightly. Gently smash each potato with a fork.
  • Drizzle olive oil over the smashed potatoes and season with garlic powder, onion powder, salt, and pepper.
  • Roast in the oven for 20-25 minutes, flipping halfway through to ensure crispy edges.
  • Garnish with fresh parsley before serving.

Notes

For extra crispiness, sprinkle a little cornstarch on the potatoes before roasting.
You can also add crumbled bacon or cheese for added flavor.
