Ingredients
  

Soup Ingredients

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 6 potatoes peeled and diced
  • 5 cups vegetable broth
  • 1 cup milk or cream
  • salt and pepper to taste

Instructions
 

  • Add all ingredients except milk to the crockpot.
  • Cover and cook on low for 6 hours or until potatoes are tender.
  • Blend until creamy, stir in milk, season, and heat through.

Notes

Blend only part of the soup if you prefer a chunky texture.
